| Today, to comply with european community standards, hygiene and traceability are become compulsory and essential for consumer, always looking for dietary security. European legislation on 14 june 1993, our winery is in keeping with HACCP standards. At every bottling process, we take samples for micro-biological analysis. We keep them for two years, then we taste all the bottles from a same vintage. We estimate the evolution of the quality for every vintage. |

As regards traceability, every bottle, every box has a reference number. The destination of wine (customer by cutomer) is written down to answer the questions about the evolution of our wines in our customer's cellar. From March 2002, Roc Epine Domaine promises a "quality process" thanks to :
- Traceability from the wine stock to the consumer
- the control of water use
- management for the effluents and other wine-producing waste
- improvement in the worh organisation
- give a clear and complete information for the terroir, the wines and environemental policy lead by the winegrowers
| The vineyard
| We put an environmental contract in place and we are bound to develop a multifunction wine-growing : a controlled agriculture and a natural heritage's protection . Our objectives are :
development of controlled agriculture's methods to reduce the effects of the pollution. ploughing on all the wine-farm domain. cancellation of nitrogenous ferlilization and provision of compost to reduce the vigour of the vine, planting of grass on one third of the domain. organic fight against insects
The traceability is always effective. Every day the wineyard manager writes all the works. Thanks to these informations we follow the grapevine's life from the vegetation start to the vintage season, then from the transformation into wine to the customer's cellar. The traceability is complete from the grapes (raw material) to the sold wine of the consumer (finished product). Our purpose is realised, that's to say : the control of every period of the development and the transformation, a real traceability, particularly a qualifying and omnipresent search |
